A 21 cm user-friendly with a handle made of walnut burl and a blade made of Apex Ultra and 1.2767. Lire plus..
The cutting edge of this 21 cm Userfriendly is made of the Apex Ultra with a hardness of 66 hrc. The side layers are made of nickel steel 1.2767 ESU. The blade was ground convex. The knife has good cutting ability, but at the same time offers enough power reserves for worry-free work. In the choil area the wedge effect is a little stronger than usual, with my Userfriedly. Towards the tip, the grind becomes increasingly sharp and more performant. The blade has a clear taper, but is not laser-thin towards the tip. The profile is suitable for all cutting techniques.
The octagonal handle is made of burl walnut with a reindeer horn spacer and a nickel silver pin.
A quick note: Apart from PM steels, all of the cutting steels I use are additionally refined during the forging process to ensure the most homogeneous distribution of alloying elements possible. The flat material is precisely ground flat and stacked into packages with a height of at least 60mm. These packages are then fire-welded and forged in the absence of air. The resulting flat steel forms the starting material for San-Mai constructions or mono-steel blades.
