The geometry of this 27cm gyuto corresponds to a workhorse with a strong taper. It has a high cutting ability in the front half of the blade, towards the throat the wedge effect increases significantly. The high blade weight also supports the cut.
This knife is suitable for all cutting techniques.
The handle of this knife is slightly slimmer than normal. I only recommend the knife for users up to glove size 9 (L).
The blade consists of the powder-metallurgical high-performance steel Vanadis 23, which is extremely wear-resistant.
Although the steel is not stainless, it has only a low reactivity.
