When making this extra large kitchen knife made of 1.2063 I thought of the old "Sabatier" kitchen knives (more information about the steel used). On the first third from the choil, the blade corresponds to a userfriendly, the front two thirds of the blade are a pure laser. The flat spot is a little less than half the cutting edge length. The front third of the blade has a slight flex.
The handle is made of flamed oak. The forged tang lies comfortably in the hand, especially in the pinch grip.
As with all knives made by me, the blank is forged with optimal temperature control and forming from 60mm to 80mm thick starting material. This process creates a very fine-grained matrix and very small and finely divided carbides.
