This small series of kitchen knives is limited to 30 pieces. All knives were made exclusively by me and by hand.
The blades are made of tungsten-alloyed tool steel 1.2419 and have a hardness of approx. 64 hrc. Unlike my custom knives, the steel for this small series was not additionally refined. Rather, the blanks were forged from the flat material at a fine-grain annealing temperature. Each blank was then subjected to another pendulum annealing cycle for grain refinement and soft annealed. Each blank in this series was subjected to at least three additional pendulum annealing cycles for grain refinement.
The blanks were hardened at 840 °C with an 8 minute holding time. They were then deep-cooled at -78 °C (to reduce the residual austenite content) and tempered twice at 185 °C for 45 minutes each.
The geometry corresponds to a slightly stronger user-friendly. The knives offer good cutting ability with sufficient power reserves for worry-free work. The knives have a certain wedge effect on the choil. The grinding angle tapers continuously towards the front and ends in a medium-fine ground tip. The grind is slightly convex. The profile is suitable for all cutting techniques.
The blades have a simple but clean cross finish. The back and choil are rounded but not polished. An edge of brushed forged skin was left on the back of the blade.
The octagonal, Japanese-style handle is made of desert ironwood with a grenadilla cover and a carbon fiber pin.
