This classic Japanese kitchen knife has a high cutting ability, but at the same time offers enough power reserves for carefree work. The blade is primarily designed for pull and push cuts as well as for chopping.
The new high-performance knife steel ApexUltra was used for the cutting edge. Despite a high working hardness of 66 hrc, it has very good cutting edge stability. It keeps a high level of sharpness for a very long time and can still be easily resharpened.
Of course, the blank was forged with optimal temperature control and forming and then subjected to extensive heat treatment (including deep-freeze treatment after hardening). This guarantees an optimally adjusted structure and extremely finely distributed carbides.
