This 24cm Gyuto made of 1.2419.05 looks big and strong overall (more information about the steel used). The blade is higher than usual with a 24cm blade length and the handle is slightly larger and more voluminous overall. In terms of geometry, the knife also corresponds more to a strong userfriendly or a mixture of userfriendly and workhorse. Nevertheless, the knife convinces with a very good cutting performance. The cutting edge is only minimally curved on the first half after the choil. Therefore, the knife is equally suitable for all cutting techniques.
The handle is made of desert ironwood (cut in the X-Cut) and grenadilla.
As with all knives made by me, the blank is forged with optimal temperature control and forming from 60mm to 80mm thick starting material. This process creates a very fine-grained matrix and very small and finely divided carbides.
