The geometry of this 23cm gyuto corresponds to a userfriendly. It has a very high cutting performance, but at the same time offers enough reserves for carefree handling.
This knife is suitable for all cutting techniques.
The blade consists of the highly wear-resistant steel 1.2562.
As with all knives forged by me, the blank is forged with optimal temperature control and forming from 60mm to 80mm thick starting material. This process creates a very fine-grained matrix and very small and finely divided carbides.
After hardening, the blank was subjected to a deep freeze treatment.
