This 25cm Gyuto has a blade made of roller bearing steel 1.3505. The geometry corresponds to a user-friendly, very good performance but enough reserves for carefree work. The cutting edge is gently curved over the entire length. This makes the knife primarily suitable for rocking cuts and for push and pull cuts.
The handle is a fantastic piece of thuja burl with a grenadilla top plate.
As with all knives made by me, the blank is forged with optimal temperature control and forming from 60mm to 80mm thick starting material. This process creates a very fine-grained matrix and very small and finely divided carbides.
