The geometry of this 25cm gyuto corresponds to a workhorse with a strong taper. It has a high cutting performance in the front half of the blade, towards the choil the wedge effect increases significantly. The high blade weight also supports the cut.
This knife is suitable for all cutting techniques, but I recommend it for pull and push cuts and for chopping.
The blade consists of the stainless powder-metallurgical high-performance steel CPM-MagnaCut.
The steel has been hardened to the recommendations of metallurgist Larrin Thomas. Of course, after hardening, the steel has undergone a cryo treatment.
