This elegant 26cm Gyuto has a blade made from the special alloy 1.2419.05 (more information about the steel used). The geometry corresponds to a user-friendly, very good performance but at the same time sufficient power reserves for carefree work. The edge is only minimally curved on the first half from the choil. Therefore, the knife is suitable for all cutting techniques.
The handle is made of desert ironwood and bronze.
As with all knives made by me, the blank is forged with optimal temperature control and forming from 60mm to 80mm thick starting material. This process creates a very fine-grained matrix and very small and finely divided carbides.
