The geometry of this elegant 28cm kitchen knife made of 1.2063 corresponds to a userfriendly (more information about the steel used). Very good cutting performance and at the same time sufficient power reserves for carefree work. The cutting edge is gently curved along its entire length, making the knife equally suitable for all cutting techniques.
The handle is made of black stabilized hornbeam and synthetic ceramic.
As with all knives made by me, the blank is forged with optimal temperature control and forming from 60mm to 80mm thick starting material. This process creates a very fine-grained matrix and very small and finely divided carbides.
