This noble Gyuto has a blade from the special melting 1.2419.05. This steel offers an excellent combination of hardness, resistance to abrasive wear and toughness. The handle is made of desert ironwood and wrought bronze. The geometry of this knife corresponds to a user-friendly one. This means that it has a good cutting performance, but at the same time offers enough reserves for worry-free handling. This knife is equally suitable for all cutting techniques. The cutting edge can be nailed along the entire length.
The blank of this blade was forged from an 80mm thick solid material with a forging start temperature of 900 degrees within one heat to about 15mm. The forging then took place at a maximum of 780 degrees. After each heat, the blank was cooled to below 720 degrees. This process produces a very fine-grained matrix as well as very small and finely divided carbides.
