This 26cm Gyuto has a differentially hardened blade made of 1.2008. In the right lighting conditions, a subtle but clearly recognizable hamon shows up. The geometry corresponds to a laser that cuts very easily. Accordingly, the knife must be used with a little more care. The cutting edge is only slightly curved in the first half from the choil. Therefore, the knife is equally suitable for all cutting techniques.
The handle is made from stabilized buckeye burl and reindeer antlers.
As with all knives made by me, the blank is forged with optimal temperature control and forming from 60mm to 80mm thick starting material. This process creates a very fine-grained matrix and very small and finely divided carbides.
