This 23 cm Gyuto is a classic laser. Low blade thickness, ground very thin and the blade flanks are only slightly convex. As a result, the blade is a very good performer, the food release is naturally less pronounced than with thicker and more convex blades. The tip is thin but not too thin and sensitively ground. The knife is equally suitable for all cutting techniques.
The blade is made from 125sc ultra high carbon steel on which I have performed several additional heat treatment steps (diffusion annealing, forging, normalizing, fine grain annealing, soft annealing). In order to exploit the full performance potential, the blade was subjected to a deep freeze treatment after hardening to reduce the residual austenite content.
The blade has been differentially hardened and shows a clear hardening line (Hamon).
The western handle is made of historic oak from a medieval well (seasoned 15 years) and a steel end plate.
