This simple yet elegant Integral Gyuto has a blade made of the high-performance blade steel "Apex Ultra", with a hardness of at least 66 hrc. The blade is ground slightly convex and has a clear taper. The geometry is userfriendly, it is a very good performer but at the same time it has enough power reserves for worry-free work. The tip is very finely ground but without any “flex”.
The profile is suitable for all cutting techniques.
The handle is made of Bryere burl wood. This is the root ball of the French heather tree. After harvesting, the wood is boiled for 24 hours before being dried for many years. The wood is traditionally used to make tobacco pipes.
