This 23cm semi-integral gyuto has a blade with an Apex Ultra core. The sides are made of approximately 150 layers of damascus steel. The bolster is forged and embedded precisely into the handle wood.
The blade has a strong taper. On the choil it has a strong wedge effect and clearly leans towards workhorse. Towards the front, the blade becomes increasingly more cutting-edge and ends in a finely ground tip. The blade has a complex geometry in which both the crown and the bevel angle decrease towards the tip.
The knife is suitable for all cutting techniques.
The western handle is made of macassar ebony. A special feature is the tang, which goes completely through the handle and is riveted at the end with a decorative damask rivet.
A quick note. For all blades I make, including blades made of “mono steel”, the cutting steel is additionally refined. The only exception is the blades made of PM steel. For this purpose, the flat material is precisely ground flat and fire-welded in the absence of air. The blanks are forged from at least 60mm solid material. This results in a significantly more homogeneous distribution of the alloying elements. In combination with optimal heat treatment, this results in very small and evenly distributed carbides. Of course, all blades are subjected to a deep-freeze treatment after hardening to reduce the residual austenite content.
